Shakshuka is a healthy and hearty tomato-based brunch dish with a slightly spicy kick, guaranteed to add some heat to your chilly winter mornings!
We love Shakshuka and wanted to give a twist to a traditional recipe using our Organic Bone Broth for a nutrient boosting and flavorful addition.
Ingredients:
1 diced medium onion
1 diced bell pepper
4 finely chopped garlic cloves
2 tsp paprika
1 tsp cumin
1/4 tsp chili powder
1 large can whole tomatoes drained
6 eggs
2/3 cup Organic Chicken Bone Broth
1 small bunch chopped fresh cilantro
1 small bunch chopped fresh parsley
salt and pepper
Instructions:
*Heat olive oil in a large pan over medium
*Add the bell pepper and onion and cook for 5 minutes
*Add garlic and spices and cook an additional minute
*Pour the can of tomatoes and broth into the pan and break down the tomatoes using a large spoon
* Season with salt and pepper and bring the sauce to a simmer until it thickens
*Use spoon to make small wells in the sauce and crack the eggs into each well
*Cover the pan and simmer 5 minutes, or until the eggs are done to your liking
*Garnish with chopped cilantro and parsley
Enjoy with a warm piece of pita bread or toast for dipping!
